A no-bake birthday cheesecake loaded with rainbow sprinkles and Funfetti frosting is the kind of dessert that makes the whole idea of turning on the oven in summer entirely unnecessary. Total preparation time runs to just 15 minutes of active work, with the cheesecake requiring at least four hours in the refrigerator (or overnight) to set properly.
The recipe, developed by Delish with food styling by Makinze Gore and photography by Linda Pugliese, builds on the straightforward appeal of no-bake cheesecakes: no water bath, no risk of cracking across the top, and no anxious check through the oven door to see whether the centre has caught up with the edges.
Why a No-Bake Birthday Cheesecake Works Year-Round
The case for skipping a traditional baked cheesecake is partly practical. A no-bake method, as the recipe notes, takes roughly half the time of its baked equivalent and removes the two most common failure points: an uneven set in the middle and a cracked surface. For anyone who finds cheesecakes intimidating, this is a forgiving place to start.
The crust uses 24 Golden Oreos, pulsed to fine crumbs in a food processor and bound with five tablespoons of melted unsalted butter. That mixture is pressed into a 9-inch springform pan (base and sides) and chilled until the filling is ready. If a springform pan is not to hand, a 9-inch pie dish works as a substitute.
The filling combines 1½ cups of heavy cream, whipped to stiff peaks, with three 8-oz packages of softened cream cheese, 1½ cups of confectioners’ sugar, and a tablespoon of imitation vanilla extract. Once the cream cheese mixture is smooth, the whipped cream is folded in gently, followed by ¾ cup of rainbow sprinkles, plus additional sprinkles reserved for decoration. The folding stage is deliberate: overworking the mixture deflates the cream and affects the final texture.
After the filling goes into the crust, the cheesecake needs a minimum of four hours in the refrigerator, overnight is preferable for a clean, set slice.
Funfetti Frosting and the Finishing Details
The topping leans into celebration. A full 15.6-oz container of Pillsbury Funfetti frosting is transferred to a piping bag fitted with a star tip and piped around the edge of the cheesecake before serving. More sprinkles go on top. The Funfetti element is described in the recipe as a deliberate nostalgia play, though the recipe notes that whipped cream or a cream cheese frosting work equally well as alternatives for anyone who prefers a less sweet finish.
Customisation is built into the concept. Swapping the rainbow sprinkles for a single colour scheme (or colours that match a birthday theme) takes a matter of seconds and changes the look entirely without altering the method.
On the make-ahead front, the cheesecake (without toppings applied) can be prepared up to two days in advance and kept refrigerated. The crust alone, wrapped in plastic, also holds for two days. That flexibility makes the recipe practical for anyone hosting a party and wanting to distribute the preparation across the days leading up to it.
For equipment, a piping bag and star tip are listed as needed for the frosting border. The Nabisco Golden Oreo base and the sprinkle-heavy filling mean presentation does most of the visual work before the piping bag even comes out. The cheesecake yields eight to ten servings, enough to cover a modest birthday gathering without a second batch.
